

Well, last week's Menu Plan Monday didn't exactly work out the way I meant for it to. Actually, the post did, but the menu didn't! The sale flyer for Safeway comes out on Wednesdays, so I waited until then to do my shopping for the rest of the week (including all those tasty sounding Crock Pot meals). Problem? By the time I got home, it was too late to start the Pork Chop Potato Dinner without us eating at 8 o'clock at night. Not good when that's the Little's bedtime, eh? Plus my husband needed some things for a night class he was taking the next day, so there was shopping to be done after dinner. Needless to say we just grabbed a bite at the food court after shopping and several other recipes have been bumped by a day or two.
Here's to better attempts this week! I am actually writing this post on Thursday, the 15th, in the hopes that I'll be pulled together all of next week...and I'll also be using a lot of items already in the pantry and freezer. Woohoo! So, what's cookin' at your house this week?

- Monday: Busy Day Beef Stew (from Taste of Home's Slow Cooker Recipes 2007, p. 90)
- Mediterranean Chicken with Green Salad (found the marinated chicken breasts at Costco; we tried the Teriyaki ones last week...YUM!)
- Wednesday: leftovers
- Thursday: Creamy Italian Chicken (p. 110) and Spaghetti (another pantry staple here)
- Friday: Lemon-Pepper Tilapia (tilapia filets, another Costco find) with Parmesan Noodles
- Saturday: Slow Cooked Tamale Casserole (p. 92)
- Sunday: "Breakfast" Dinner (pancakes and eggs, always a hit with the kiddo)








Oh yum...Lemon-Pepper Tilapia with Parmesan Noodles sounds good! =) Lemme know how they turn out! =)
