Menu Plan Monday: Mexican and Italian, Oh My!

How's the weather where you live?  Ours has been pretty typical of the Pacific Northwest...in other words, one minute it's sunny and gorgeous, the next minute it's pouring.  Seriously pouring!  Ah well, it all works out, because on the pretty days I get the urge to start organizing, and yesterday's project was totally emptying and reorganizing my pantry.  Needless to say that worked out real well for menu planning, as I now have a much better idea of what we have on hand in the pantry and the freezer. 

For previous weeks I was choosing recipes and buying groceries, and while I was able to find some fantastic deals (I'll give you a link to my other blog on that later this week!), but now that everything's nice and organized, I'll be better able to plan recipes off of what is on hand.  And what entrepreneur doesn't like to make the most of the assets they already have, eh?

Here's my Menu Plan for this week:

  • Monday: Lemon-Herb Chicken w/ Broccoli Rice
  • Tuesday: Slow Cooker Tamale Casserole
  • Wednesday: Penne w/ Vegetables
  • Thursday: Leftovers/sandwiches
  • Friday: Turkey Club Squares
  • Saturday: Beef Taco Skillet (you can find the recipe for this one in lots of the women's magazines lately; it looks so good!)
  • Sunday: Fajita Stew

Oooh, beef taco skillet hm? That sounds tasty! As does the Lemon-herb chicken! I might have to get that recipe from you! =) Ah, and I see you moved Fajita Stew to next Sunday! LOL =P

Yes, come to find out the fajita stew is gonna take more slow cooking time than I planned for today because I've been sitting at the computer instead of, um, slow cooking. LOL

The lemon-herb chicken is an easy "cheat"...we buy the three-pack of marinated breasts at Costco. It contains several pounds of breasts, in three flavors: lemon-herb, Mediterranean, and teriyaki. They are SO GOOD!

Here in central Oklahoma the weather is rainy and warm...time to gear up for those lovely tornados that grace our presence each Spring.
